at our school's pep rally we have signs that go on the wall over where each class sits and we need adjectives that start with "s" to describe our senior class
examples: we were the fierce freshman, sassy sophmores, jumpin juniors.
they were all sorta lame and i really want it to be good.

I know it sounds goofy, but what about the "Splendorific Seniors"? Splendorific isn't a real word, but it's different. Here's some other suggestions: Swanky, Serendipitous, Sublime, Saccharine, Sensational, Stupendous, and Sycophantic. Of course, there are many more, but I thought that these all sounded the best.
For a quote, do you have a movie, book or person in particular that you like? Or something that you're known for? I'd look and see if you can find a quote from it/them that you like--that's what I did. I'm a Star Wars fanatic, so I took a quote from there (I think it was "Why you scruffy-haired nerf herder!", but I might have used another one...). Just start looking around for one, because it really does take time to find something you really like. If you have a favorite movie, there are a ton of web sites that list memorable quotes from movies, so you could always start looking there!
Good luck.
