Cream is excellent, I have their Best Of album.
Goodness...you want me to pick 3 favorites? THERE'S SO MANY TO CHOOSE FROM! And my favorite changes so often.
Recently I've been listening to a lot of Chick Corea and Return to Forever, which is Jazz-Fusion stuff. I'm also a big fan of jazz guitarists: Kurt Rosenwinkel, Jimmy Bruno, Pat Martino, and Joe Pass. I love all their work as leaders, and I basically study it. And when I feel like getting less jazzy, I listen to some Rage Against The Machine or Dead Kennedys.

And yes Xena, I do listen to non-jazz/funk music now and then :D
